I have recently found out from my doctor that I am hypoglycemic and on my way to being diabetic. She has recommended I start a Low GI diet. Unfortunately, I live on pasta and bread and don't really have the motivation to cook anything else. And all these low GI recipes have crazy things in them like mushrooms, and onions, and garlic! Seriously, barley? Who eats barley?
They are full of things I used to buy before I realized molding in the veggie drawer is not what God had in mind for these foods.
That is why meal planning is a big part of Operation Housewife. Hopefully by planning ahead, I will be able to plan and prepare healthy meals for myself and my family. However, finding recipes, shopping for them, preparing, cooking, cleaning up after, etc. is so much work! If it doesn't come out of a box, it's really too much effort.
I really don't want to do it. But I will! Tonight is the night. I will plan the meals for this week and shop tomorrow. Wish me luck!
